After all of the hassle involved in actually tracking down a bottle of Peter Heering, it seems like we really have to use it now that we have it in the house. DP browsed through my Bitters book, and came across a recipe for the Remember the Maine, the perfect excuse to hit the Peter Heering again.
Rye, Sweet Vermouth, Peter Heering, Angostura Bitters, Absinthe
In his book, Brad Thomas Parsons notes that this is really a Manhattan variation.
Ingredients:
2 oz Old Overholt Rye
3/4 oz Dolin Rouge sweet vermouth
1/4 oz Peter Heering
2 dashes Angostura bitters
1 splash of Pernod Absinthe
Directions:
Stir everything but the absinthe with ice, and strain into a chilled cocktail glass that has had its interior coated with a splash of absinthe. Enjoy!
The mix of cherry liqueur and vermouth produced a deep fruity flavor, and the faint herbal notes from the absinthe came through as well. It's a sweet cocktail, sweeter than a Manhattan, and there are times when that could be a good thing. And using the Peter Heering? That's always a good thing.
