Breakfast Eggnog

We made it through the Brandy Cocktails and found a Breakfast Eggnog on the other side. Sure, it uses Apricot Brandy, but how can you not love a breakfast drink? And, really, Apricot Brandy hardly counts as Brandy at all. The recipe in the Guide produces enough to fill two cocktail glasses, but I can understand how one person would be able to finish it off. It's a good drink!

I used a generous shot of the Apricot Brandy, so our version of the cocktail may be more tropical than expected, but we do love that tiki flavor around our house (see the Champneys, and the Aqueduct, and the Apricot Cocktail...) Using a whole egg (Davidson’s Safest Choice, of course) helped work up a nice meringue, and there was none of that odd residue that we've seen in yolk-based drinks (yes, I'm thinking of you, Bosom Caresser). The Cointreau is used instead of sugar and - believe me - when combined with the Apricot Brandy, it is more than adequate as a sweetener. With eggs, and milk, and fruit from oranges and apricots to make it breakfast, and some nutmeg on top to make it an eggnog, the Breakfast Eggnog is a great way to start the day.
